INJA, located at The Manor in South Delhi, has introduced its latest tasting menu, further blending Indian and Japanese flavors in a refined dining experience. Known for its fusion approach, INJA continues to explore the intersection of these two culinary traditions, offering a unique menu designed by Chef Adwait and Global CEO of Atelier House Hospitality, Panchali Mahendra.
The new tasting menu stays true to INJA's focus on combining the robust flavors of Indian cuisine with the delicate elements of Japanese cooking. Chef Adwait, who transitioned from a career in technology to culinary arts, is known for his respect for tradition and innovation. His collaboration with Mahendra has resulted in a menu that highlights cultural integration, providing diners with an experience that stands out in hospitality and fusion dining.
Key highlights of the menu include dishes like Aam Papad with Tuna, where the tangy Indian flavor of aam papad is paired with the umami-rich tuna, and Tamatar Dhaniya Yuzu Shorba with Dashi Tomatoes Kadhi Pakoda, a fusion of Indian kadhi pakoda with a Japanese twist of yuzu and dashi. Another standout is Corn Raab with Soba and Naga Smoked Pork, which blends earthy Indian flavors with Japanese soba noodles. For dessert, the Gulkand with Mochi brings together fragrant rose-flavored gulkand with chewy mochi, offering a memorable end to the meal.
In addition to the tasting menu, INJA has introduced the Panch Indri cocktail experience, designed by Mixologist Supradeep Dey. Drawing from Ayurvedic principles, the cocktails engage all five senses and feature a blend of Indian spices and Japanese ingredients. The Kirei Martini, Inja’s Essence, and Ochita are among the drinks that add a sensory layer to the dining experience, enhancing the menu’s overall appeal.
