“I have put together original drinks using seasonal summer fruits and Indian spices found along the Grand Trunk Road. I enjoyed being behind the bar, making the drinks and sharing my thoughts on how to make great cocktails with the best of the seasonal produce and local flavours,” says Naomi Fletcher of The Drinks Map.

The Summer Cocktail Menu includes Aam Gimlet, Kala Khatta Brew, Spice Cream Soda, Indian Summer Punch, Resham ka Rose and Whisky Zinger. While the Mocktail Menu includes Pink & Green Smash (Pink guava, green melon, ginger, green chilli and lime).

Speaking on how new Aam Mahotsav menu will affect the business growth, Divyesh Thakkar, Director, The Culture House, says, “Changing the menu does alter the business and the growth of the restaurant. The promotion of the new menu helps in attracting new customer database to the restaurant. This indirectly helps in the sales of the restaurant.”

"Currently, the restaurant is doing quite well. Afternoons and evenings are fully packed. We are promoting the mango menu right now. It has just been a few days since we started the "Aam Mohatsav" in the restaurant. Masala Library by Jiggs Kalra, located at Bandra Kurla Complex (BKC) in Mumbai, has launched a new menu and revamped its chef’s tasting menu.

The new menu comprises of dishes from every region in India. The tasting menu of chef includes sampling small portions of all the signature dishes in one sitting.

The vegetarian menu is priced at Rs 2,500 plus taxes, while the non-vegetarian menu is priced at Rs 2,700 plus taxes.

Saurabh Udinia, the restaurant’s brand chef, said, “The new menu is unique. It is an amalgamation of cutting-edge techniques, coupled with extensive research into the origins of India’s rich cuisine and incredible ingredients.”

“It will take the diner through a gastronomical journey through the Indian subcontinent. We have used different techniques like freeze drying, gelling, lacto fermentation, etc. to enhance the flavour, appearance and the elements of various dishes,” he further stated.

Udinia added, “The menu is the result of extensive food trips across rural India and gaining a firm understanding of their cuisine and ingredients. Our team explored several regions including the North-Eastern belt, the southern coast, the western desert, the Kashmir valley and the Konkan region to learn about the cuisine, and this has influenced are new additions to the menu.”

It also includes the Serrano Butter Smothered Grilled Baby Lobsters, Tequila Fired Grilled King Prawns and Jalapeno Cilantro Rubbed Grilled Fish served with house sweet potato fries.

There are also the Ancho Spiced Sweet Potatoes Nachos with Refried beans, Queso, sour cream, pico de gallo and guacamole and the Barbecue Zucchini Mushroom Skewers served with sour cream and tortilla chips for vegetarians.

The desserts comprise the Star Xmas Tree, made from cinnamon-infused dark chocolate mousse, stuffed with fresh strawberry coulis, plum fruits, pistachio praline, almond crisp, crunchy profiteroles and dusted with cilantro sponge crumb with a star tuile perched on it.

“As Indians, the majority of our population is protein-deficient. In the future, more concentration could also be placed on increasing protein in all products. The steamed egg is a great value-add. Healthier choices like wraps, steamed eggs, and other such options should be added to the basket of products. Lastly but most importantly, portion control is important. Also, a takeaway message is that these foods are ’sometimes’ food and should not replace every day healthy balanced meals,” she added.
