Celebrated Restaurant Nihonbashi Now Open at Port City Colombo

Celebrated Chef Dharshan Munidasa's esteemed Japanese culinary destination transitions to Port City Colombo amidst a splendid inauguration. Accompanied by His Excellency President Ranil Wickremesinghe, the ceremonial ribbon cutting signified the restaurant's official debut.

Since its inception in 1995 at Galle Face Terrace, Nihonbashi has been a pioneering force in the Japanese culinary landscape of Sri Lanka for nearly three decades, embodying an esteemed mastery of washoku. With its name translating to 'Japan-Bridge,' the restaurant's mission is to forge a cultural connection between Sri Lanka and Japan through authentic Japanese cuisine. This commitment led Nihonbashi to consecutively feature on 'Asia's 50 Best Restaurants' list from 2013 to 2018, a notable achievement that marked it as the first Sri Lankan restaurant to receive such a prestigious recognition. As a trailblazer in popularizing Japanese gastronomy, Nihonbashi has inspired other renowned establishments such as Ministry of Crab, Kaema Sutra, and Carne Diem Grill, all reflecting the influence of Japanese culinary traditions.

Acknowledged for his steadfast dedication to upholding the essence of washoku, Chef Dharshan was bestowed with ‘The Order of the Rising Sun, Gold and Silver Rays,’ a distinguished award by the Japanese Government. As Nihonbashi enters a new chapter by relocating to Port City Colombo, an innovative urban development endeavor set to redefine lifestyle norms and stimulate global investments, its narrative unfolds. Nestled as the gateway to South Asia, the city embodies a vibrant fusion of services and opportunities, symbolizing a dynamic landscape primed for growth and progress.

Committed to emphasizing local sourcing, Nihonbashi proudly prioritizes ingredients from nearby markets, reserving imports solely for exceptional items unavailable within Sri Lanka. At its new establishment in Port City Colombo, Chef Dharshan upholds this principle diligently by giving precedence to local resources and sustainable sourcing methods. Reflecting on the meticulous design process, Dharshan describes his pursuit of ingredients as akin to a culinary exploration, as he scoured quarries and bamboo forests to craft this Japanese-inspired locale. Each element, from stone to grain of sand, bamboo shoot to timber piece, was thoughtfully chosen to embody the essence of ‘Wa’ – a Japanese design ethos synonymous with finding perfection within imperfection, encapsulated by the concept of Wabi-Sabi.

The restaurant's ambiance showcases eight private dining rooms that seamlessly fuse Japanese tatami and Western seating styles, such as Chikurin (Bamboo Forest), Bonsai, Ikebana, Samurai, Whiskey, Wine, Sake room, and Tachinomi Bar, paying tribute to Dharshan's Japanese heritage. Notable features include an outdoor bar and what may perhaps be the world's largest Yakitori Grill. Chef Dharshan emphasizes, ‘This restaurant is truly unparalleled worldwide, even in Japan. Our distinctive approach of conceptualizing the menu before designing the kitchen, along with our predominant use of Sri Lankan materials, sets us apart.’ - Chef Dharshan Munidasa, the creative force behind Nihonbashi and Ministry of Crab.

The carefully curated menu blends traditional and contemporary Japanese fare, offering a wide selection ranging from A5 Japanese Wagyu, Sushi, Sashimi, Tempura, Teriyaki, and Nabe to an assortment of yakitori choices, complemented by Dharshan’s signature dishes such as Olive Oil Kake Tai Cha, Foie Gras No Teriyaki, Karapincha Tempura, and Tensabi Temaki. Positioned in Port City Colombo, Nihonbashi is poised to elevate the local dining scene, acting as a nucleus for global collaborations with renowned chefs and mixologists worldwide to craft unforgettable culinary experiences for both local patrons and visitors exploring Colombo.

Cricketer Varun Aaron, His Sister Rhea Aaron Opens Klaa Kitchen in Bengaluru
Cricketer Varun Aaron, His Sister Rhea Aaron Opens Klaa Kitchen in Bengaluru

Klaa Kitchen, a Goan soul food through the lens of the Aaron household, has evolved into a cornerstone of flavors and community in Bangalore.

What began as a reflection of Chef Rhea Aaron's passion to refine food experiences has transformed itself into a story rooted in stories of Goa, her family and a culinary history that dates back generations, brought into today through the careful hand of Chef Rhea.

Klaa Kitchen's journey commenced with its first pop-up in ECR Kovalam, led by Rhea Aaron with significant support from "Anna," her brother Varun Aaron, who assumed the role of sous chef. This event, nestled in a tiny fishermen’s village just outside Chennai provided the spark for what eventually became Klaa Kitchen. With the diners being enthralled by the Chef Rhea’s rich flavours and ability to dole out inventive yet comfortable plates, it started a series of such pop ups across the country which allowed for a sharpening of the story.

From there Chef Rhea traveled from Hyderabad at Glass Onion to Mysore with Sapa Bakery and Pondicherry with Bread and Chocolate. While the formats differed, it was the blending of her Goan heritage with her contemporary cooking style and ability to engage with audiences at a nearly familial level, was what created the building blocks for Klaa Kitchen.

Along with these pop ups, Chef Rhea has continued to build a strong presence amongst the curious diners of the city of Bangalore with her pop ups, delivery menus and private catering which led to a strong customer base who were clamoring for her to open a space which they could visit whenever they wanted to.

From there arose the idea of creating a space that was wholly a Klaa experience, derived from the many pop ups that defined the evolution of her cooking and the love received from the diners of the city.

Klaa Kitchen is today, a coming together of Chef Rhea Aaron’s vision for Goan food along with her brother Varun Aaron’s memories of growing up across the country but never forgetting the roots of their culinary destiny, along with restaurateur Bikash Parik who has been instrumental in bringing the entire concept together.

Along with Rhea and her approach to creating a transformative Goan experience on the plate is her partner, Bikash Parik. He has been instrumental in creating one of the most iconic dining brands in the city with Green Theory and through his creative agency Little Green Studio, has shapend many brands narratives in the city and across the country.

Varun Aaron, Rhea’s brother and a huge inspiration behind the storytelling of the brand is a cricketer and has represented the Indian Cricket Team at the highest level. Amongst his many passions and endeavors currently, being the creative force along with Rhea for the brand and to tell the story of their family is a key driver of his every day.

Blue Tokai Coffee Roasters Opens its 100th outlet in India
Blue Tokai Coffee Roasters Opens its 100th outlet in India

After taking the entire country on an unparalleled coffee journey and putting Indian specialty coffee on the global map, Blue Tokai Coffee Roasters, India’s largest specialty coffee brand, has opened the doors to its 100th café in the country.

With its latest cafe in Kolkata, the company has achieved its target of hitting the milestone before FY24 and is well on its way to curating a pan-India coffee experience that brings people together over shared interests.

“With the increasing affinity for high-quality coffee, consumers are now actively seeking out-of-home coffee experiences that extend beyond just transactions and focus on the need for inclusive, safe spaces. Such experiences, when paired with a thoughtfully curated food menu and experiential offerings like workshops, have transformed the way people see coffee shops. Our growth in the last 12 months reflects the impending demand for go-to coffee spots and increasing brand loyalty. Our aim is to take this count closer to 200 by the end of the coming fiscal year,” shared Shivam Shahi, Co-Founder and COO, Blue Tokai Coffee Roasters.

For Blue Tokai, while it started as a small roastery experience centre in the lesser-known neighbourhood in Said-ul-ajaib in Delhi, these cafés have proved to be an instrumental channel in shaping India’s coffee preferences across demographics. The brand has witnessed a 2x growth in its café presence since FY23, mirroring the ever-increasing demand for specialty coffee - a segment popularised by Blue Tokai’s inception in 2013.

Blue Tokai’s cafés are located at places of convenience like premium markets, corporate parks, malls, and residential neighbourhoods - an organic extension of the consumers’ daily schedule. Echoing the aim of making great tasting Indian coffee more accessible across the country, Blue Tokai’s 100th café is strategically located in the bustling neighbourhood of Ballygunge and brings together the soulful aroma of freshly brewed coffee, an extensive range of artisanal bakes, delicious food options and a perfect spot for readers, with a bookstore by Bahrisons Booksellers on the first floor.

The Ballygunge outlet will be home to several hot and cold brews like Espresso, Pourover, Americano, Cappuccino, Flat White, Trioccino, Vietnamese-style iced coffee amongst many others - all brewed using Blue Tokai’s high-quality roasted beans. Customers will be in for a treat with food preparations ranging from healthy to indulgent and a wide variety of sweet and savoury options, baked to perfection by Suchali’s Artisan Bakehouse. This café will also be home to a compelling collection of roasted coffee beans, fresh breads and other coffee and bakery retail offerings.
