Gus’s World Famous Fried Chicken traces its story to Mason, Tennessee, where Napoleon “Na” Vanderbilt and his wife, Maggie, developed a hot and spicy fried chicken recipe more than six decades ago. What began as chicken sold from the back of a tavern grew into Maggie’s Short Orders in 1973. In 1984, their son Vernon “Gus” Bonner reopened the restaurant under the Gus’s World Famous Hot and Spicy Fried Chicken name. The webinar describes this family-led evolution and the preservation of the original recipe.

The brand has retained its original recipes and Southern identity while expanding across the United States. Its positioning is built around fresh, never-frozen chicken, distinctive spices and a dining experience rooted in community, tradition, quality and hospitality. GQ has also recognised Gus’s among America’s top meals worth travelling for.

A Premium QSR Opportunity in India

The webinar highlighted India’s growing appetite for branded food experiences, supported by urbanisation, rising disposable income, delivery adoption and interest in Western food. Fried chicken was presented as an attractive QSR category with room for differentiated premium concepts.

The brand’s vision is to become a preferred destination for fried chicken lovers while staying true to its roots. Its mission focuses on bringing people together through food and creating welcoming spaces for families, friends and communities.

Menu and Customer Experience

The proposed menu includes fried okra, fried pickles and fried green tomatoes, alongside chicken plates, à la carte options, snacks, kids’ meals and sides such as mac and cheese, fries, potato salad and baked beans. The India offering may add items while maintaining the brand’s core ethos.

Franchise Model and Investment

The webinar outlined a 1,000–2,000 sq. ft. sit-down QSR format accommodating around 40–80 covers. Indicative total investment was presented at INR 55–75 lakh, including a INR 15 lakh franchise fee, fit-out, launch marketing, training, architecture and equipment. Property deposits were excluded. The franchise term is five years, with renewal available, while royalty was stated at 7% of sales.

The expansion strategy includes unit and area franchise opportunities, with priority markets including Delhi NCR, Hyderabad, Chennai, Bengaluru, Mumbai and Pune. Partners are expected to bring operational involvement and leadership, rather than only capital.

Wendy McCrory, President and owner of Gus’s World Famous Fried Chicken, represents the brand’s leadership, while Manish Kumar is leading its India expansion initiative.

Building the Next Chapter in India

With its long-standing recipe, strong identity and premium fried chicken positioning, Gus’s is looking to build a new chapter in India. The webinar invited entrepreneurs who can combine operational commitment with a passion for hospitality to explore the opportunity and help establish the brand in new markets.

The Café Gold Rush: 9 Winning Food Franchises to Own Under ₹30 Lakhs
The Café Gold Rush: 9 Winning Food Franchises to Own Under ₹30 Lakhs

India's food and beverage (F&B) industry is witnessing strong growth, driven by changing consumer preferences, rising café culture, increasing demand for desserts, and the popularity of quick-service dining. As customers continue to seek quality, convenience, and unique dining experiences, franchising has emerged as an attractive route for entrepreneurs looking to enter the sector.

With an investment budget of up to ₹30 lakh, aspiring franchisees can partner with fast-growing brands that offer proven business models without the high capital requirements associated with larger legacy chains. This investment range strikes a balance between affordability and scalability, making it possible to establish a profitable venture while keeping operational costs manageable.

Here are nine promising food and café franchise opportunities that can be launched within a budget of ₹30 lakh.

1. Jab We Met

This brand turns Bollywood nostalgia and aesthetic youth culture into a highly bankable café model, serving pocket-friendly continental comfort food, artisanal mocktails, and shakes.

  • The Store Layout: (300–600 sq. ft.) Split right down the middle: an Instagram-ready front seating zone to attract college crowds, backed by a compact, modular kitchen engineered for low-complexity fast-food prep.

  • The Investment Details: ₹15 – ₹25 Lakhs. Covers a ₹6 Lakh franchise fee, thematic interior fit-outs, and sleek counter hardware.

  • The Profit Angle: Continental items utilize high-margin, easy-to-store ingredients, keeping food costs strictly controlled. Expect a sharp 22%–26% net profit margin and capital payback within 12–14 months.

A highly targeted, nighttime-centric dessert café that captures the lucrative post-dinner crowd with premium waffles, crepes, and decadent hot chocolates.

  • The Store Layout: (250–400 sq. ft.) Engineered for high-impact night visibility. Features prominent, neon-lit outdoor branding wrapped around an efficient kitchen counter optimized for specialized waffle irons.

  • The Investment Details: ₹15 – ₹22 Lakhs. Deployed toward high-end, specialized dessert-making machinery, prominent illuminated outdoor signage, and targeted local digital marketing.

9. Coffee Shop (Regional Hub Models)

A flexible, zero-royalty micro-café framework that allows local owners to serve both authentic South Indian filter coffee and Western espresso drinks with total operational freedom.

  • The Store Layout: (150–300 sq. ft.) A minimalist micro-kiosk setting dual-brewing stations—traditional brass filter coffee warmers alongside automated espresso heads—directly on the front counter for lightning-fast service.

  • The Investment Details: ₹10 – ₹15 Lakhs. The most budget-friendly entry point on the list because 100% of your capital goes directly into your physical asset setup and opening stock, rather than recurring corporate cuts.

  • The Profit Angle: Bypassing monthly franchise royalty fees drastically lowers your operational break-even point. You keep every single rupee of profit, giving you total freedom over your local menu pricing and direct owner returns.

The Smart Money Move

Before jumping in, remember the 80/20 Rule of F&B Budgeting: Never dump all ₹30 Lakhs into the physical store setup. Save 15% to 20% of your capital as a working capital reserve. Having a financial buffer to smoothly handle property rentals, staff payroll, and aggressive hyper-local social media ads during the first 3 to 6 months is what separates successful franchise owners from the rest.
