Turkish cuisine is slowly becoming popular in India, especially the well known dishes like Donner kebabs and pit bread. And, to ensure that patrons get an “authentic” flavour of Turkey, Sercan Unsal, Country Head of Ala Turka restaurants, explains their strategy and expansion in other parts of the country.

Baibhab Das (BD): Importance of location for a specialty restaurant?

Sercan Unsal (SU): We have chosen DLF Mall, Saket as it is easily accessible by our target audience, coupled with a large number of foreign tourists who visit this shopping destination.

BD: What steps have you taken to ensure the authenticity of your restaurant?

SU: We offer a cuisine that not many restaurants in this city offer. Apart from that, we try to provide a ‘flavour’ of Turkey at our facility, and our staff is also well trained in this regard.

BD: Kindly throw light on your marketing strategy. Is pricing also an important criterion in your strategy?

SU: We have tried to ensure that our restaurant is relevant for our target audience, namely upper middle class consumers, and our prices reflect that.  We also rely heavily on word- of- mouth marketing from our patrons, and also have a lively page on Facebook.

BD: Are you planning to expand beyond Delhi, and your growth strategy?

SU: We are currently evaluating setting up restaurants in Goa and Kashmir, given the large number of tourists in both these locations.
