Fiori Brings European and Mediterranean Flavors to Lonavala

Fiori, a glasshouse restaurant situated in the scenic hills of Lonavala, offers a fusion of European and Mediterranean flavors in a serene setting. Named after the Italian word for "flowers," Fiori aims to provide a unique dining experience for both locals and travelers, blending Mediterranean charm with European sophistication.

The restaurant is a project by siblings Suraj Gupta and Sanskriti Gupta, second-generation entrepreneurs from the family-owned Regenta SG's Greenotel. Suraj, an Economics graduate from Ashoka University, brings his travel experiences and hospitality knowledge to the table. Sanskriti, an architecture graduate from Sheffield University, worked with an interior designer to create Fiori's distinctive glasshouse appeal, integrating natural elements for a calming atmosphere.

Fiori’s design features a contemporary, earthy ambiance with a glasshouse that complements wooden elements crafted by local artisans. The space embraces Lonavala's charm, from its monsoons to its winters, with polycarbonate sliding roofs that open up the restaurant to the natural surroundings. The interior’s ambient lighting and flower vases add comfort and sophistication, enhancing the dining experience with a fresh and vibrant atmosphere.

The menu, led by Head Chef Gracian de Souza, focuses on vegetarian dishes inspired by European and Mediterranean culinary traditions, using organic ingredients and innovative flavors. Starters include Cream of Mushroom Soup with crème fraîche and truffle oil, and Beetroot and Goat Cheese Salad with orange segments and honey mustard dressing. Main courses feature dishes like Neapolitan pizza with assorted mushrooms and goat cheese, Garlic Pizza with rosemary herb oil, Mushroom Risotto with truffle butter, and Paneer Steak with mashed potatoes and pesto sauce. Desserts include Cookie Tart with salted caramel ice cream, Dutch Truffle Chocolate Slice, and Tiramisu Cake.

Fiori also offers a selection of drinks, such as the tequila-based Bee Sting, Caramellow Sour with caramel and whiskey, Lavender Love with gin and lavender, and Fiori's Sunset with Aperol and grapefruit juice. Other beverages include Miel Latte, Blueberry and Walnut Smoothie, Date and Avocado Shake, and Vietnamese Iced Coffee.

At The Fern Residency, Vijayapura, he will be responsible for overseeing daily operations, revenue generation, and maintaining profitability.

Amarendra Singh has taken on the role of General Manager at The Fern Residency, Ellisbridge, Ahmedabad. With over two decades of experience, Singh has a proven track record in strategic hotel management. His career includes roles with Royal Orchid Hotels and Pride Hotels. At Ellisbridge, he will focus on innovation to enhance guest experiences and meet business objectives.

Rajesh Rajan will serve as the General Manager at Harsha The Fern-An Ecotel Hotel, Shivamogga. Rajan brings 18 years of hospitality experience, including roles at Accor and The Oberoi. His responsibilities will involve managing budgets, improving profitability, and initiating new revenue-generating ideas.

Sankha Maiti is the new General Manager at The Fern Residency, Bhopal. With over 20 years in the industry, Maiti has expertise in Reservations, Revenue Management, and Business Operations. His previous positions include roles at Sarovar Hotels and Regenta Hotels. At Bhopal, he will oversee operations, budget management, and guest satisfaction.

Gopal Kumawat has been appointed General Manager at The Fern Residency, Jodhpur. With 18 years of experience in F&B management and business development, Kumawat's past roles include positions at Fortune Group and The Ramada Group. His role will include managing operations and profitability at the Jodhpur property.

Ranjeet Tiwari is the new General Manager at The Fern Ranthambhore Forest Resort, Sawai Madhopur (Ranthambore). With 16 years in hospitality, including roles at Rosado Jaipur and Hotel 10 Park Gorakhpur, Tiwari will be responsible for hotel operations and budget management, aiming to enhance profitability.

Under his leadership, Sofitel Mumbai BKC has received numerous accolades from esteemed publications and organizations.

Sidney played a key role in the hotel's adoption of Winnow, a food waste management solutions company that uses AI tools to help chefs run more sustainable kitchens by reducing food waste.

Growing up in Mumbai, Sidney developed an early interest in food, leading him to the Institute of Hotel Management, Mumbai. He further specialized in Food Service Management and Hospitality Management from Cornell University and Food Safety from the American Hotel and Lodging Education Institute.

With nearly two decades of experience, Sidney has worked with leading Michelin-star venues in New York under celebrity chefs such as Michel Roux Sr., Floyd Cardoz, and Hemant Oberoi. His previous role was at The Conrad Hotel in Pune, where he served as Executive Chef and later as Culinary Director. He was recognized in the Power 25 Culinary, 2022 by Hoteliers Web.

Sidney began his culinary journey in 2002, training at ITC Grand Maratha Sheraton and The Oberoi, Mumbai, before joining the Taj Management Training Program. He worked at Taj hotels in Delhi and Chennai, and later at The Taj Mahal Palace and Tower in Mumbai. He spent time at The Taj Pierre New York and The Taj Boston, introducing Indian food to their menus.

Returning to The Taj Mahal Palace and Towers in Mumbai, Sidney served as Sous Chef at Masala Kraft and later at Golden Dragon. He then moved to The Ritz Carlton in Bangalore as Chef de Cuisine and later as Executive Sous Chef. His career path led him to the JW Marriott Hotel in Pune and Mumbai, before joining The Conrad Hotel in Pune.

Sidney has developed the ability to cater to both Indian and international palates and has a deep knowledge of structuring culinary teams, launching new culinary concepts, and managing large-scale banqueting.

Outside the kitchens of Sofitel Mumbai BKC, Sidney enjoys engaging with guests and sharing his experiences. In his downtime, he likes watching football matches and spending time with his family.

This will be SAMHI’s second Courtyard by Marriott, joining the successful Courtyard by Marriott at Outer Ring Road, Bengaluru.

Additionally, SAMHI has entered into another agreement with Marriott for its 114-room hotel in Jaipur, which will be rebranded as a Tribute Portfolio hotel. This rebranding will also occur post-renovation by the end of FY2026. Jaipur, a major tourist and business hub in India, attracts both domestic and international visitors. The hotel’s central location in the city will be enhanced as part of the Tribute Portfolio, known for its unique, independent hotels that emphasize captivating design and vibrant social scenes. This rebranding is expected to significantly boost the hotel's market positioning.

Further, SAMHI has signed agreements with Marriott to convert four additional ACIC hotels from franchise to management agreements.

Both properties are situated to provide easy access to Bhutan's key attractions. Thimpu, the capital city, is known for its vibrant culture and historical landmarks, while Paro is famous for its natural beauty and the iconic Paro Taktsang (Tiger's Nest Monastery).

Maitraya added, "We have another 20 hotels in the construction phase right now. The next two years will see The Crimson portfolio announcing another eight new hotels in India, Nepal, and Bhutan. Four of these new eight will be five stars."

Crimson Hotels' portfolio includes Basics Inn and Suites for economy stays, Econostay for mid-market hotels, Citron for five-star properties, and the Akatsukii Collection for five-star deluxe and luxury hotels.

Each drop of water undergoes thorough refinement through multiple filtration stages and is disinfected with ozone, which is more effective than chlorine.

The program provides fresh water to guests in sterilized and sealed glass bottles, significantly reducing single-use plastic waste. In approximately two and a half months, the hotel expects to eliminate an estimated 122,304 single-use plastic bottles. This bottled water is now a permanent feature in all guest rooms, food and beverage outlets, and event spaces.

Shangri-La Eros New Delhi continues its efforts to eliminate single-use plastic across its operations. The installation of the water bottling plant marks a significant step towards sustainability and enhances the guest experience by offering environmentally responsible amenities.

“In FY24, we posted sales of about Rs 700 crore, and we are planning to touch about Rs 820 crore in FY25, on account of new product ranges, distribution expansion, and the e-commerce segment — which brings in about 30 percent of sales for the company,” he added.

Saxena also mentioned Wonderchef's intention to launch its IPO in 2026.

Chef Magic, an innovative all-in-one kitchen robot, revolutionizes cooking with its fully automatic functionality. It boasts over 200 pre-installed recipes from various cuisines curated by Chef Sanjeev Kapoor, with the IoT-enabled interface updating with new recipes weekly.

Saxena explained that the concept for Chef Magic was inspired by European technology and adapted to cater to Indian cooking preferences. The "ultimate kitchen appliance" has already garnered over 1,000 pre-bookings in just one month, indicating a notable shift in consumer behavior in India.

“We are confident of achieving Rs 200 crore in sales from Chef Magic in 3 years. This product will be leveraged strategically to further strengthen our foothold in overseas markets and we will be servicing the global markets from June this year,” Ravi Saxena commented.

UBL, AB-InBev, and Carlsberg Collaborate to Establish Brewers’ Association of India
 

India's foremost beer manufacturers, including United Breweries (UBL), now under the ownership of Dutch brewing giant Heineken, AB-InBev, and Carlsberg, have jointly announced the establishment of a new industry association named Brewers’ Association of India (BAI).

These three brewing giants—UBL, Brewer Anheuser-Busch InBev (AB InBev) which owns renowned brands like Budweiser, Hoegaarden, and Corona, and Carlsberg, known for its Carlsberg and Tuborg brands—collectively contribute to approximately 85 percent of beer sales in India.

UBL leads the Indian beer market with its popular brands such as Kingfisher, Kalyani Black, Heineken, and Amstel Bier. BAI, established in collaboration with the World Brewing Alliance (WBA), aims to foster the growth of the beer sector in India and promote innovation, moderation, and sustainability within the Indian beer market, according to an official statement.

The WBA serves as the global industry body for brewers and brewing trade associations across major markets, including Australia, Canada, the US, Europe, Japan, Korea, Latin America, Brazil, and New Zealand.

BAI's headquarters will be located in Delhi, with Vinod Giri appointed as its head, effective June 1, 2024. Giri, previously at the helm of the Confederation of Indian Alcoholic Beverage Companies (CIABC), brings extensive experience from the Indian alcoholic beverage industry to his new role.

Brewers can play an important role in strengthening local economies, contributing to thriving communities and achieving better public health outcomes. The time is right for brewers to raise their voices on these issues. The Brewers of India will be a vital part of promoting moderate drinking, promoting our industry,” WBA President and CEO Justin Kissinger said.

The newly formed association will welcome other brewers, both domestic and international, who share the commitment to fostering responsible growth within the Indian beer industry.

Kartikeya Sharma, President, AB InBev India stated, “There are many barriers to the growth of India’s beer category, including inequitable taxation, accessibility, and the ease of doing business. We will continue to advocate to unlock a new era for the beer category.”

The beer industry is an important sector for the states as it provides significant direct and indirect employment and generates significant revenues for the state to invest for its citizens. Through the Brewers’ Association of India, the industry expects to bring best global practices and further strengthen the sector,” commented Nilesh Patel, MD, Carlsberg India.

UBL MD & CEO Vivek Gupta said, “Together, the industry can help shape policies promoting responsible choices for consumers around moderate alcohol beverages, a robust taxation and regulatory framework and promoting investments for socio-economic benefits. We look forward to collaborating with governments and other stakeholders.”

The three companies have made substantial investments in India. Carlsberg operates seven breweries, UBL has 19, and AB-InBev India operates 10 breweries nationwide.

Sales of quick service restaurants (QSR) such as Domino's and Pizza Hut are feeling the pinch from the rapid expansion of food delivery platforms like Zomato and Swiggy, while quick commerce, led by Zomato-owned Blinkit and Swiggy-owned Instamart, is diverting younger customers from traditional retail and physical stores.

According to a report from brokerage firm BNP Paribas Exane, the QSR industry witnessed revenue growth of 9 percent year-on-year for the final quarter of FY24, compared to 18 percent growth in the same quarter of FY23. Both same-store sales growth (SSSG) and average daily sales (ADS) declined during this period.

Zomato and Swiggy have been aggressively expanding their reach. Zomato’s average monthly active restaurant partners surged from 61,000 in FY19 to 2.7 lakhs by FY24, while Swiggy boasted 2.72 lakh partners by the end of FY23. In contrast, there were only 5,300 branded stores operated by QSR firms.

The brokerage report highlighted, "With consumers now having more options, sales are likely to get fragmented, denting the already weak average daily sales of the QSR industry, along with the general weakness in demand."

Despite subdued growth, QSR firms have not significantly altered their store expansion plans or capital expenditure guidance. Jubilant Foodworks, the franchisee of Domino’s in India, plans to open 180 Domino’s, 50 Popeyes, and 25 Hong’s Kitchen stores. Devyani International, operating KFC and Costa Coffee, aims for 275-300 net new store additions in FY25. A survey conducted by brokerage firm Bernstein revealed that 60 percent of respondents aged 18-25 preferred purchasing from quick commerce platforms, with 12 percent opting for mom and pop stores, 10 percent using slotted delivery platforms, and only 5 percent choosing modern retailers.

Quick commerce adoption decreased with age, with 44 percent adoption in the 26-35 age group, 33 percent in the 36-45 range, and 30 percent in the over 45 age group. Older users relied more on mom and pop stores, with adoption rates at 27 percent for over 45-year-olds and 20 percent for the 36-45 age group.

Grocery remained the dominant category for quick commerce usage, with 44 percent of customers primarily using it for groceries. Home and cleaning supplies followed at 20 percent, while beauty and personal care accounted for 16 percent. Newer categories like apparel, electronics, and books had lower adoption rates at 2 percent, 4 percent, and 1 percent, respectively.

Initially launched in Bangalore, these MMUs will expand to various locations across the city, benefiting around 200 delivery partners daily.

Teleconsultation Services

Swiggy has joined forces with the Reliance-powered Visit app to extend teleconsultation services to all its delivery partners and their families. This initiative facilitates virtual consultations with specialized doctors in General Medicine, Gynecology, Orthopedics, and Pediatrics, catering specifically to the needs of delivery partners, their spouses, and children. Additionally, delivery partners will have access to prescribed medications at discounted rates, ensuring affordable healthcare access when needed.

"Ensuring the safety and well-being of our delivery partners has always been a priority for Swiggy, leading to many initiatives like on-demand ambulance, paid period time off, telemedicine facilities, and summer recharge zones. The introduction of mobile medical units and teleconsultations is another step in this direction. Our delivery partners are always on-the-go, but their health should not take a backseat. These mobile medical units reach them where they are, encouraging them to prioritize their health. By providing access to essential healthcare services, we aim to promote a culture of wellness among our delivery partners,” said Mihir Shah, Head of Operations, Swiggy.

Both initiatives are set to expand to additional cities in the upcoming weeks. This rollout further solidifies the company's commitment to the health and safety of its delivery partners, building upon the successful introduction of services like the on-demand ambulance service in 2022 as part of its "Delivering Safely" initiative.

According to a regulatory filing, Parag Milk Foods recently announced a significant 56.1 percent decrease in consolidated net profit, amounting to Rs 9.81 crore for the fourth quarter ending March 2024. This is compared to a consolidated net profit of Rs 22.35 crore during the same period in the previous fiscal year.

The BSE filing revealed that its total revenue from operations declined to Rs 790.11 crore in Q4 FY24, down from Rs 800.95 crore in Q4 FY23. On the other hand, total expenses for the company decreased to Rs 784.23 crore in Q4 FY24, compared to Rs 793.57 crore in the corresponding period the previous year.

Devendra Shah, Chairman, Parag Milk Foods stated, “Our consolidated revenues for FY24 have crossed the milestone of Rs 3,000 crore; along with improvement in margins and profitability. The profit after tax for the year amounted to Rs 91 crore, supported by healthy operating cash flows of Rs 99 crore."

In the preceding fiscal year FY24, the company experienced a remarkable 73.3 percent year-on-year (YoY) growth in consolidated profit, reaching Rs 90.58 crore compared to the consolidated net profit of Rs 52.24 crore in the fiscal year 2022-23. Revenue from operations for the fiscal year FY24 amounted to Rs 3,138.7 crore, showing an increase from the revenue of Rs 2,892.6 crore in FY23.

"In the recent quarters, milk procurement prices have been favorable, but there is an anticipation of a potential increase. Despite facing challenges, we are prepared to enhance our margin profile. We are making progress in transforming our business processes while also enhancing efficiency throughout the value chain. As we expand and accelerate our distribution network, we intend to establish a foreign wholly owned subsidiary (WOS) in Dubai to serve the international market. With a strong foundation in place, we are confident that we will achieve industry-leading growth and profitability in the future,” Shah explained.

LT Foods, a global FMCG company with Indian origin and with presence of over 70 years in the consumer food sector, reported a 14% increase in consolidated net profit, reaching Rs 150.24 crore for the fourth quarter of fiscal 2023-24, driven by strong sales.

LT Foods owns basmati rice brands 'Daawat' and 'Royal,' registered a net profit of Rs 131.81 crore in the same period last year. Total income for the January-March quarter of 2023-24 rose to Rs 2,091.73 crore, up from Rs 1,834.95 crore in the corresponding period the previous year, as stated in a regulatory filing. Expenses also increased, totaling Rs 1,898.46 crore compared to Rs 1,685.92 crore a year earlier. For the entire fiscal year 2023-24, LT Foods reported a 41.35% rise in net profit, amounting to Rs 597.59 crore, up from Rs 422.75 crore the previous year. Total income for the year climbed to Rs 7,822.05 crore, compared to Rs 6,978.81 crore the prior year.

Commenting on the company's performance, Ashwani Arora, MD and CEO of LT Foods, stated that despite a challenging external environment, the company has achieved remarkable growth in both revenue and profitability for another consecutive year.

He highlighted that the three main segments—Basmati and other specialty rice, organic food and ingredients, and Ready-to-Eat and Ready-to-Cook products—have together delivered an impressive 12% year-on-year growth.

This consistent performance underscores our strategic focus on continuous investment on brands across geographies and innovation, which has significantly bolstered our domestic and international market position,” Ashwani further stated.
